Chuletas Guisadas are a delicious family meal you can make in no time. My Abuela served this delicious stewed dish to me at least once per week in Puerto Rico. The dish is ready in less than 30 minutes and the aroma will make everyone ask you what's cooking. (For real.)

What are Chuletas Guisadas?

Chuletas Guisadas, a Latin American favorite, is made with pork chops, peppers, and onions simmered in a tomato sauce. This is the recipe that my grandmother used to make every week. Every region has their own version of the dish. My Abuela always put olives into her Chuletas Guisadas. I follow that recipe. My favorite way to serve mine is over Puerto Rican rice and beans with ripe slices of plantain. You can pair it with a salad or slices ripe avocado.

What are the ingredients in Chuletas Guisadas?

The end result of this dish is so much more than the sum of its parts. Every Latin family has its own version and the ingredients will vary depending on where you are from. This is what you will need to make Chuletas Guisadas in my version:

  • Pork Chops- The thickness of the pork chops will determine how quickly it cooks. I like thinly sliced chops, because they are cheaper and cook quicker. But you do you.
  • Sofrito This robust flavor base will add complexity to any dish.
  • Tomato Sauce & Chicken Broth are the base of your sauce.
  • Onions and Peppers – Add flavor and bulk to the dish.
  • Vinegar and Olives - This briny combination will help cut through the fattiness in the pork.
  • Adobo, Sazon, Oregano, and Bay Leaf are spices that quickly add layers of flavor to your sauce or pork chops.

Tips For Making Chuletas Guisadas

  1. To ensure that the vegetables cook evenly, cut them all the same size. If you slice the vegetables in different sizes, then some of them will be undercooked and others overcooked.
  2. Cover the pan. This will help cook the meat evenly, and keep it moist.
  3. Do not overcook pork chops. They will still be tough and dry, even if they're in sauce. The general rule of thumb is 7 minutes for every 1/2 inch thickness.

What sides go well with Chuletas Guisadas?

This dish is delicious with fried sweet plantains and Puerto Rican rice and beans. You can serve this dish with a Simple Side Salad, or avocado slices. You can also try it on top of Garlic Herb Mash Potatoes. OMG. OMG. !

How to Store Leftovers

To store leftovers, place them in an airtight container and refrigerate for 3 days. You can also freeze for three months. Thaw frozen Chuletas Guisadas in the refrigerator overnight to reheat. After that, heat them up in a skillet on medium heat until they are steaming. Add a bit of chicken broth to your skillet when you are reheating the pork chops to keep them from drying out.

  • 3 Tbsp olive oil, divided $0.12
  • 2 lbs thinly cut pork chops, bone-in $9.98
  • 2 tsp adobo* $0.08
  • 6 Tbsp sofrito $1.08
  • 1 Tbsp minced garlic $0.14
  • 8 oz tomato sauce $0.59
  • 1 Tbsp white distilled vinegar $0.04
  • 1 1/2 tsp sazon* (1 packet) $0.17
  • 2 cups chicken broth $0.24
  • 1/4 cup Pimento-stuffed green olives, sliced* $0.33
  • 2 tsp oregano $0.20
  • 1 bay leaf $0.10
  • 1 Onion, sliced into 1/4 inch half-moons $0.42
  • 1 bell Pepper, sliced into 1/4 inch strips $1.59
  • 1/4 cup fresh cilantro leaves $0.27

Instructions

  • Add 2 tablespoons oil to a large pan over medium heat. Rub the pork chops in the mixture of adobo and the remaining 1 teaspoon oil. Pork chops can be seared in batches. Cook for 2 minutes each side on both sides.
  • Remove the pork chops and place them aside. Sauté the garlic and sofrito until fragrant (about 2 minutes).
  • Add tomato sauce, vinegar and sazon to the pan and cook until mixture is thickened, approximately 4 minutes.
  • Stir well. Add olives, bay leaf, oregano and chicken broth. Bring the sauce up to a rolling boil, then reduce it by a quarter.
  • Cover the pan and reduce the heat to medium low. Cook the pork chops until they are tender. This will take about 7 minutes per 1/2 inch thickness.
  • Cover the onion and bell pepper and cook for about 5 minutes until they are soft.
  • Remove the pan from the heat, and add the cilantro leaves. If necessary, add more salt and pepper to the sauce. Enjoy your new favorite dish over white rice!

Notes

If you can't find Adobo in your local store, make it yourself and use the quantity specified in the recipe. The rest can be stored in an airtight jar.

1 tsp of ground oregano
1 tsp of onion powder
1 tsp Black Pepper
1 tsp cumin ground
1/2 tsp turmeric
A packet of sazon is approximately 1.5 teaspoons. If you can't find sazon, use these alternatives:
1/4 teaspoon garlic powder
14 teaspoon cumin ground
1/4 teaspoon of ground coriander
13 teaspoon of ground annatto
1/8 teaspoon of turmeric
Oregano, 1/8 teaspoon, ground
Manzanilla Olives, or pimento-stuffed olives, are other names for these green olives.

Chuletas Guisadas: Step-by-Step Photos

Add 2 tablespoons oil to a large pan over medium heat. Rub the pork chops in the mixture of 2 teaspoons adobo and the remaining 1 tablespoon oil. The 2 pounds of chops should be seared in batches. Both sides should be seared for about 2 minutes each.

Remove the chops and place them aside. Sauté the minced garlic and 1/3 cup sofrito in the drippings of pork chops for about 2 minutes.

Add 8 ounces tomato sauce, 1 teaspoon white vinegar and 1 1/2 tablespoons sazon. Sauté until the mixture becomes thicker, approximately 4 minutes.

Stir well. Add 2 cups chicken broth, 1/4 of the pimento-stuffed oil olives, two teaspoons of oregano and one bay leaf. Bring the sauce up to a rolling boil, then reduce it by a quarter.

Cover the pan and reduce the heat to medium low. Cook the pork chops until they are tender. This will take about 7 minutes per 1/2 inch thickness.

Add 1 onion (sliced into half-moons of 1/4 inch) and 1 bell Pepper (sliced into strips of 1/4 inch) to the pan. Cover and cook for 5 minutes.

Remove the pan from the heat, and add 1/4 cup of chopped cilantro. If necessary, add more salt and pepper to the sauce. Enjoy your new favorite dish over white rice!
